Homemade Ice Cream!

I got an ice cream maker for my birthday in July. Thanks McMahon family! We broke it out this week and made some Oreo mint ice cream. It was delicious!

Here's the fabulously easy recipe:
  • 2/3 cup coarsely chopped Oreo cook
  • 2 large eggs
  • 3/4 cup sugar
  • 2 cups heavy cream
  • 1 cup milk
  • 2 teaspoons peppermint extract
  1. Place the cookies in a bowl, cover, and refrigerate.
  2. Whisk the eggs in a mixing bowl until light and fluffy, 1 to 2 minutes. Whisk in the sugar, a little at a time, then continue whisking until completely blended, about 1 minute more. Pour in the cream and milk and whisk to blend. Add the peppermint extract and blend again.
  3. Transfer the mixture to an ice cream make and freeze following the manufacturer's instructions.
  4. After the ice cream stiffens, about 2 minutes before it is done, add the chpped cookies, then continue freezing until the ice cream is ready.
